Ceviche is an ancient tradition, part of our rich culture, and our flagship dish to the world, showing our culinary traditions. Ceviche is a refreshing and flavorful dish that showcases the culinary heritage of<strong><a class=\"aioseop-link\" href=\"https:\/\/viajesmachupicchu.travel\/en\/tips-for-travelers\/all-about-peru-updated-information\"> Per<\/a><\/strong><a class=\"aioseop-link\" href=\"https:\/\/viajesmachupicchu.travel\/en\/tips-for-travelers\/all-about-peru-updated-information\"><strong>u<\/strong>.<\/a><\/p>\n\n\n\n<p>In Peru, we make this<strong><a href=\"https:\/\/blog.viajesmachupicchu.travel\/en\/the-best-of-perus-seafood-a-flavorful-ocean-journey\/\" title=\"\"> seafood <\/a><\/strong>from fresh raw fish, cure it in lime juice, and spice it with Peruvian chili peppers.\u00a0It is typically served with red onions, salt, and cilantro.<\/p>\n\n\n\n<p>In 2004, the National Institute of Culture (INC) named ceviche a National Cultural Heritage. It got this honor because it\u2019s the most popular dish in\u00a0Peru. Also Peruvian government named the 2008, June 28th  &#8220;Ceviche Day&#8221; in Peru.<\/p>\n\n\n\n<p>Later, on December 5, 2023, UNESCO\u00a0 included the creation and consumption of ceviche in its Representative List of the Intangible Cultural Heritage of Humanity.<\/p>\n\n\n\n<p>This achievement shows us the importance of this dish. However, let\u2019s see some history about Ceviche, what kinds of ceviche you can find while in Peru, and why it is important for us, Peruvians.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Ceviche, the Origin<\/strong><\/h2>\n\n\n\n<p>The history of Ceviche dates back around 2000 years, when the<strong><a href=\"https:\/\/blog.viajesmachupicchu.travel\/en\/the-lord-of-sipan-perus-ancient-moche-secrets-unveiled\/\" title=\"\"> Moche culture<\/a><\/strong> marinated shellfish and fish in fermented juice made from native passion fruit called &#8220;tumbo&#8221;.<\/p>\n\n\n\n<p>Later, during the Inca Empire, Incas used to marinate fish in <strong><a href=\"https:\/\/blog.viajesmachupicchu.travel\/en\/chicha-incas-legacy-in-a-glass\/\" title=\"\">chicha<\/a><\/strong> (Andean fermented beer or \u201cThe Incas\u2019 beer\u201d) or orange juice.\u00a0<\/p>\n\n\n\n<p>Some historians stated that in some regions of the South American country, such as Lima, Piura, Tumbes, and <strong><a class=\"aioseop-link\" href=\"https:\/\/viajesmachupicchu.travel\/en\/destinations\/trujillo\">Trujillo<\/a>,<\/strong> indigenous people used to eat raw fish with salt and Peruvian chili peppers, called &#8220;aji&#8221; or &#8220;rocoto&#8221;.<\/p>\n\n\n\n<p>Around 500 years ago, the Mexican historian Pedro Guti\u00e9rrez de Santa Clara wrote in his &#8220;<em>Civil Wars of Peru<\/em>&#8221; (1544-1548) that \u201cPeruvian Indians\u201d ate everything they caught in the river or sea raw with aji or salt.&nbsp;&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"697\" height=\"327\" src=\"https:\/\/i0.wp.com\/blog.viajesmachupicchu.travel\/en\/wp-content\/uploads\/2024\/11\/tumbo_portada-1170x550-1-1.jpg?resize=697%2C327&#038;ssl=1\" alt=\"\" class=\"wp-image-11026\" srcset=\"https:\/\/i0.wp.com\/blog.viajesmachupicchu.travel\/en\/wp-content\/uploads\/2024\/11\/tumbo_portada-1170x550-1-1.jpg?resize=1024%2C481&amp;ssl=1 1024w, https:\/\/i0.wp.com\/blog.viajesmachupicchu.travel\/en\/wp-content\/uploads\/2024\/11\/tumbo_portada-1170x550-1-1.jpg?resize=300%2C141&amp;ssl=1 300w, https:\/\/i0.wp.com\/blog.viajesmachupicchu.travel\/en\/wp-content\/uploads\/2024\/11\/tumbo_portada-1170x550-1-1.jpg?resize=768%2C361&amp;ssl=1 768w, https:\/\/i0.wp.com\/blog.viajesmachupicchu.travel\/en\/wp-content\/uploads\/2024\/11\/tumbo_portada-1170x550-1-1.jpg?w=1170&amp;ssl=1 1170w\" sizes=\"auto, (max-width: 697px) 100vw, 697px\" \/><figcaption class=\"wp-element-caption\"><strong>Mochica Culture and <a href=\"https:\/\/blog.viajesmachupicchu.travel\/en\/peruvian-flavors-tumbo-the-andes-citrus-treasure\/\" title=\"\">&#8220;tumbo<\/a>&#8220;, lime pioneer.<\/strong><\/figcaption><\/figure>\n\n\n\n<p>When the Spaniards arrived in Latin America, they brought citrus fruits, and they used the juice as the only ingredient to marinate the fish in ceviche.<\/p>\n\n\n\n<p>During this time, ceviche began to fully evolve as a national food, with local and regional flavors used to enhance it. In addition, in his book <em>&#8220;La Gu\u00eda de Lima<\/em>,&#8221; Manuel Atanasio Fuentes included a recipe for &#8220;ceviche.&#8221; <\/p>\n\n\n\n<p>The book also references other spicy foods from 1860, with small pieces of fish or shrimp marinated in bitter orange juice and seasoned with chile and salt.\u00a0<\/p>\n\n\n\n<p>Before Peru\u2019s independence from Spain in 1820, a song called \u201cLa Chicha\u201d became extremely popular, and people used to sing it as an anthem.<\/p>\n\n\n\n<p>Even though Peru was still under Spanish domination and did not have its own national anthem yet. \u201cCeviche\u201d was mentioned along with other dishes in Peruvian cuisine.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Cooking Process<\/strong><\/h2>\n\n\n\n<p>Ceviche marries fresh fish in a lime-based mixture with onions, aji amarillo, and rocoto <strong><a href=\"https:\/\/blog.viajesmachupicchu.travel\/en\/perus-fiery-hot-peppers-the-spicy-soul-of-andean-cuisine\/\" title=\"\">hot peppers. <\/a><\/strong>Typically, chefs marinate the fish for a few hours, but recently, some people have opted to marinate the fish for only a few minutes to achieve a lighter, less chewy texture.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"697\" height=\"319\" src=\"https:\/\/i0.wp.com\/blog.viajesmachupicchu.travel\/en\/wp-content\/uploads\/2024\/04\/ceviche-peruano-preparar-rico-saludable.webp?resize=697%2C319&#038;ssl=1\" alt=\"\" class=\"wp-image-12174\" srcset=\"https:\/\/i0.wp.com\/blog.viajesmachupicchu.travel\/en\/wp-content\/uploads\/2024\/04\/ceviche-peruano-preparar-rico-saludable.webp?resize=1024%2C469&amp;ssl=1 1024w, https:\/\/i0.wp.com\/blog.viajesmachupicchu.travel\/en\/wp-content\/uploads\/2024\/04\/ceviche-peruano-preparar-rico-saludable.webp?resize=300%2C138&amp;ssl=1 300w, https:\/\/i0.wp.com\/blog.viajesmachupicchu.travel\/en\/wp-content\/uploads\/2024\/04\/ceviche-peruano-preparar-rico-saludable.webp?resize=768%2C352&amp;ssl=1 768w, https:\/\/i0.wp.com\/blog.viajesmachupicchu.travel\/en\/wp-content\/uploads\/2024\/04\/ceviche-peruano-preparar-rico-saludable.webp?w=1200&amp;ssl=1 1200w\" sizes=\"auto, (max-width: 697px) 100vw, 697px\" \/><\/figure><\/div>\n\n\n<p>The acidity of the lime &#8220;cooks&#8221; the fish, resulting in a firm texture and zesty flavor. Add some spiciness, add finely chopped red onions, cilantro, and aji amarillo (Peruvian yellow chili pepper). <\/p>\n\n\n\n<p>Finally, season to taste with salt and pepper. Serve chilled with sweet potato and corn (cancha) on the side for a true Peruvian touch.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Why is it called that?<\/strong><\/h2>\n\n\n\n<p>There are a few theories on why ceviche got that name. This exciting three-episode series will dive into ceviche&#8217;s cultural, social, and environmental significance.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Our Ceviche Restaurant Picks<\/strong><\/h2>\n\n\n\n<p>Firstly,  <strong>La Rosa N\u00e1utica<\/strong>, located in the <strong><a class=\"aioseop-link\" href=\"https:\/\/viajesmachupicchu.travel\/en\/destinations\/lima\/attractions\/miraflores-district\">Miraflores<\/a><\/strong> area, has attracted notice from guests due to its odd surroundings.
